INGREDIENTS
  1. 1/4 cup cacao powder

  2. 1/2 cup almond flour

  3. 1/2 tsp baking powder

  4. 1/2 cup erythritol

  5. Pinch of salt

  6. 1/4 cup Vitawerx Choc Coconut Rough, melted

  7. 1/2 cup butter

  8. 2 eggs
FOR CHEESECAKE
  1. 250g cream cheese

  2. 1/4 cup sweetener

  3. 1 tsp vanilla

  4. 1 egg
METHOD
  1. Combine cacao, almond flour, baking powder, sweetener and salt in a bowl

  2. In a separate bowl melt chocolate and butter together (either in a double boiler or in 20 second intervals in microwave – once warmed through then stir until the chocolate melts – make sure it’s not too hot)

  3. Stir in chocolate mixture to the eggs. Combine with dry ingredients

  4. For the cheesecake: combine cream cheese, sweetener, vanilla and egg. Mix until combined.

  5. Line a 20cm square pan with parchment paper then add most of the brownie mixture (reserve about a 1/4 cup)

  6. Pour cheesecake over the brownie layer

  7. Add remaining brownie batter in 5 dollops then use a skewer to swirl the batter

  8. Bake at 180°C for approximately 20 minutes. Let them set for 1 hour before serving
