A deep, savoury red miso traditionally fermented from organic soybeans and brown rice. Its robust umami flavour adds depth to soups, marinades, dressings, sauces and vegetable dishes. Stir it in toward the end of cooking to preserve its character, and refrigerate the unpasteurised paste after opening.
